Ingredients

  • 2 tablespoons virgin olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon white vinegar
  • 1 tablespoon water
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon coriander, finely chopped
  • ½ teaspoon dried oregano
  • 1 tablespoon red onion, finely chopped
  • ½ clove of garlic
  • ½ teaspoon chili flakes
  • ½ teaspoon whole cumin seeds, roasted and grounded
  • ¼ piece Hass avocado, diced
  • 1 pinch sea salt
  • 1 pinch ground black pepper
  • 1 portobello mushroom, cut in strips
  • ¼ white onion, cut in strips
  • ¼ yellow bell pepper, cut in strips
  • ¼ green bell pepper, cut in strips
  • 1 piece Pan Oroweat 12 granos toasted
  • Spray vegetable oil

Preparation

Fajitas:

  1. In a pan, over high heat, let oil warm up and then stir fry onion, peppers and portobello. Season.
  2. Add the mix on top of the 12 Grain Oroweat Bread slice and dress with chimichurri.

Chimichurri:

  1. In a bowl, mix thoroughly the rest of the ingredients. Season and save.
